Avocados. Most people don’t have much clue about them. We know it is nutritious, it’s a good type of fat, and that we should consume them regularly. But that’s it!
Everything else is quite a mystery.
Do we leave it on the counter or put it in the refrigerator to ripen?
When does it ripen!?!
Ok, it’s ripe now. How do I eat it?
Avocados are obviously the main ingredient in guacamole. Another common way of eating them is slicing them and gingerly balancing them atop a bowl of overnight oats or granola.
There are many great ways to incorporate avocado in your cooking.
Here’s a simple one that I came up with on the fly when a friend asked me what to do with his ripe avocado. The photo is from him, with the acknowledgement of “Great idea!” after he tried it out.
AVOCADO EGG SPREAD
1 ripe avocado, peeled & seed removed
1 egg, boiled to your desired hardness (I prefer hard boiled for this recipe to work)
Your choice of base — whole grain bread, rice cracker etc. I personally eat organic rice or sesame crackers
Place avocado meat and boiled egg in a bowl.
Mash everything together.
Add a pinch of salt, if desired.
Spread on your base and enjoy!
